Fair Trade Organic Segovia Coffee
Nicaragua is a little-known, and widely under-appreciated, treasure of coffee farms, producing some of the best coffee in all of Central America. Our Nicaraguan Segovia varietal is a Strictly High Grown (SHG) Fair Trade Certified™ organically grown bean that has great body, with a clean flavor and balance. Like many beans from Central America, the flavor possesses a deep sweetness with a hint of chocolate orange. Upon comparison to other Central and South American coffees, our Nicaraguan Segovia maintains a prominent body and balance which resembles some Mexican coffees from Oaxaca. This bean is the highest grown coffee among the Centrals and has less acidity than its counterparts.
In the case of Nicaragua, its coffees are only now becoming known again in the United States owing to the long interruption of the cold war years when Nicaraguan coffee was not allowed to be imported into the United States.
The Segovia region produces the best-known Nicaragua coffees. As various estates and cooperatives begin to establish their identities in the North American specialty market they will probably reveal coffees in the standard Central America mode: fragrant, complex, with a nut and vanilla bouquet, moderately acidy and medium in body. Segovia coffees occasionally display a bigger, bolder acidity. Most Nicaragua coffee is shade grown. The highest grade is Strictly High Grown (such as ours). Coffees from the Selva Negra estate have established an excellent reputation in the American specialty market, as have the often splendidly full, chocolate-toned coffees from the Prodocoop cooperative mill in the Segovia region.
